Heat 1 tablespoon of oil in your wok over high heat until just smoking. Wash and devein the shrimp and set aside. Remove the heads and shells from the shrimp and collect them into a bowl. If the noodles are in really long strands, you will want to cut them into 10- to 12-inch lengths, or you will end up with a huge noodle ball when cooking. Soak the dried pad Thai noodles in warm water for about 20 minutes, and drain in a colander.
